Engagement Ring Mini Cupcakes Recipe

INGREDIENTS:

1 box Betty Crocker® SuperMoist® white cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 egg whites
2 cups powdered sugar
3 to 4 tablespoons milk
Assorted colored rock candy

DIRECTIONS:

1. Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 66 mini muffin cups.

2. In large bowl, beat cake mix, water, oil and egg whites with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups, each about two-thirds full. If necessary, refrigerate any remaining cake batter until ready to use.

3. Bake 12 to 16 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Cool completely, about 30 minutes.

4. In small bowl, stir powdered sugar and 3 tablespoons milk until smooth. Add additional milk 1 teaspoon at a time until desired spreading consistency. Frost cupcakes. Top with rock candy pieces.

Cristel's ring

Cristel’s marrying Luc in July and it will be the first wedding I shoot on my own. Ah!
They’re cool peeps though.

They went shopping for an engagement ring and couldn’t find anything she liked. Then, her mom gave Cristel her old engagement ring, which is pretty cool. So her ring is unique and it’s also got sentimental value. We had a mini photo-shoot for the ring the other night. It must feel so special to be getting all this attention.

Strobist set-up :
Large light-boxish set-up using 3 white foamboards for sides and back. Black velvet background. One strobe on left aimed at the foamboard to bounce back on the ring. The strobe was at 1/2 power I think.
